Sauce & dip⏱ 15 minClassic Basil Pesto
For pasta, loosen the pesto with 3–5 tablespoons of warm pasta water before mixing. Don’t cook pesto directly over heat—it tastes freshest when stirred into hot pasta after the pan is removed from the stove. The secret: dry basil, excellent olive oil and Parmesan, minimal garlic, and keeping everything cool.

Main dishMeatballs
1. Bread – Plain white sandwich bread is best for this, but you can substitute with other breads. Tear or chop into small pieces, do not include the crust. Slightly stale bread is fine. Substitute with 1/2 cup Panko breadcrumbs. Meatballs won’t be quite as soft, but still very tender! 2. Meat – Pork is slightly fattier than beef so it helps make these extra juicy and gives it a slightly richer flavour. Feel free to just use 1 lb / 500 g beef mince which is what I do on ordinary nights, or use other ground/mince meat of choice. 3. Herbs – You can substitute with 1 1/2 tbsp dried parsley, or a mix of equal amounts of dried oregano, thyme, basil and parsley. You could also use an Italian herb mix if you wanted to. 4. Tomato passata is just pureed, strained tomatoes, sometimes labelled Tomato Puree in the US and Canada (here’s a photo of Mutti Tomato Passata sold at Walmart, high quality Italian brand). Readily available in Australian supermarkets nowadays, alongside pasta sauces. If you can’t find it, puree canned tomatoes or use crushed canned tomatoes. 5. How I roll meatballs – see video/photos in post. 6. Baking Option: Place a rack on a tray. Spray rack well with oil, place meatballs on rack, spray with oil. Bake at 200C/400F for 20 minutes until nicely browned, then simmer in the sauce for a few minutes to bring the flavours togeth

Main dish⏱ 180 minWorld's Best Lasagna
To reheat lasagna quickly, place it in the microwave until warmed through, though the pasta may become slightly softer. For better texture, cover the lasagna with foil and warm it in a 350°F (175°C) oven for approximately 30 minutes, or until the center is hot and the sauce begins to bubble.

Main dish⏱ 45 minEasy Homemade Chicken Ramen
For an even easier chicken ramen version: Without cooking the chicken separately, you can marinate the chicken overnight and then add it to the stock at the same time as the garlic, ginger, and spring onions. This will allow the chicken to cook at the same time as the stock is being infused with all of the flavors. Once the chicken is cooked (about 20 minutes), you can chop or shred it and add it back to the base, along with the mushrooms. Adding more flavor to the broth: MSG: You can add MSG to the broth to increase the umami flavor. Just add a pinch at a time, as you don’t want the MSG to overpower the flavor of other seasonings. Using dried shiitake mushrooms: If you can’t find fresh shiitake mushrooms, you can use any type of fresh mushroom. However, you can also substitute with dried mushrooms. Add dried shiitake mushrooms to the stock at the beginning, so that the mushrooms can soften in the stock, AND add more umami flavor to the ramen broth. You can add a few pieces of dried mushrooms to the stock even if you use fresh mushrooms. Once the broth has simmered, and the mushrooms have reconstituted, remove them from the ramen broth and slice the softened mushrooms. Add them back to the broth, or serve separately over the ramen noodles.
