  • 1 cupshredded sharp cheddar cheese, divided
  • ½ cupfresh tomato salsa, well drained
  • ¼ cupchopped fresh cilantro
  • 1lime, cut into wedges

Instructions

  1. 1Heat the oven to 375°F (190°C). Coat a 9-by-13-inch baking dish with 1 teaspoon olive oil. Cut the tortillas into 1-inch strips, spread them evenly in the dish, and bake for 8 minutes, until dry at the edges but not browned. Remove the dish and keep the oven on.
  2. 2While the tortillas bake, heat the remaining 1 teaspoon olive oil in a 10-inch skillet over medium heat. Add the bell pepper, onion, and jalapeño; cook for 6 to 8 minutes, stirring occasionally, until the onion is translucent and the vegetables begin to soften.
  3. 3Add the garlic, cumin, and smoked paprika to the skillet. Cook for 30 seconds, stirring constantly, until fragrant. Stir in the black beans and corn, then cook for 2 minutes to evaporate excess moisture. Remove from the heat.
  4. 4Whisk the eggs, milk, salt, and black pepper in a large bowl until fully blended with no visible streaks of egg white. Stir in 1 cup Monterey Jack and 1/2 cup cheddar.
  5. 5Spread the bean mixture over the toasted tortilla strips. Spoon the drained salsa evenly on top, then slowly pour in the egg mixture. Press down any exposed tortilla pieces with the back of a spoon. Scatter the remaining 1/2 cup Monterey Jack and 1/2 cup cheddar over the surface.
