Crispy Air Fryer Chicken Thighs

shared by Nibblore Kitchen

These air fryer chicken thighs pair crackly, well-seasoned skin with tender, juicy meat. A quick dry brine and a light coating of baking powder encourage deep browning without added breading. They make an easy weeknight dinner and cook in about 25 minutes. • Dry skin is essential for crisping, so blot the chicken thoroughly before adding oil and seasoning. • Do not overcrowd the basket; cook in batches if the thighs cannot sit in one layer with space between them. • Chicken thighs are safe at 165°F, but cooking them to 175–185°F makes their connective tissue more tender while the dark meat stays juicy. • Air fryers vary in power, so begin checking the internal temperature after 20 minutes. • Use sweet paprika instead of smoked paprika for a milder flavor. • Replace avocado oil with olive oil or another neutral high-heat cooking oil. • Substitute dried oregano or Italian seasoning for the dried thyme. • For boneless, skin-on thighs, begin checking for doneness after 15 minutes and cook to at least 165°F. Refrigerate cooled chicken in an airtight container for up to 4 days or freeze for up to 2 months. Thaw frozen thighs overnight in the refrigerator. Reheat skin-side up in a preheated air fryer at 375°F for 5 to 8 minutes, until crisp and heated to 165°F.

Ingredients

  • 4bone-in, skin-on chicken thighs, about 8 ounces each
  • 1 tspkosher salt
  • 1 tspsmoked paprika
  • ¾ tspgarlic powder
  • ½ tsponion powder
  • ½ tspdried thyme
  • ¼ tspground black pepper
  • ¼ tspaluminum-free baking powder
  • 2 tspavocado oil

Instructions

  1. 1Remove the chicken thighs from the refrigerator. Trim away any loose flaps of skin or excess fat, then pat the thighs thoroughly dry on all sides with paper towels.
  2. 2Combine the salt, smoked paprika, garlic powder, onion powder, thyme, black pepper, and baking powder in a small bowl. Rub the chicken with the avocado oil, then season evenly on all sides, working some seasoning beneath the skin without detaching it. Let stand at room temperature for 10 minutes.
  3. 3Preheat the air fryer to 380°F for 3 minutes. Arrange the thighs skin-side down in a single layer in the basket, leaving space between them for airflow. Cook at 380°F for 12 minutes.
  4. 4Turn the thighs skin-side up. Continue cooking at 380°F for 8 minutes, then increase the temperature to 400°F and cook for 3 to 5 minutes, until the skin is deeply browned and crisp. The thickest part of each thigh, away from the bone, should register at least 175°F on an instant-read thermometer.
  5. 5Transfer the thighs to a plate or wire rack and rest uncovered for 5 minutes so the juices settle without softening the skin. Serve hot.
