It is ideal to prepare in advance and serve well chilled on hot days. • Use aromatic and fully ripe tomatoes; they are the base for the flavor and color of the gazpacho. • Adding the oil after the initial blending promotes a more stable emulsion and a creamy texture. • Garlic intensifies during resting, so it's best to start with a small clove. • If the tomatoes are very watery, reduce the initial water and add it only after straining. • Substitute Sherry vinegar with white wine vinegar, using 20 ml first and adjusting to taste. • Instead of Italian green pepper, use red pepper for a sweeter and more intensely colored result. • If you prefer a gluten-free version, use 35 g of certified gluten-free white bread. • For a lighter gazpacho, omit the bread and reduce the water until the desired consistency is achieved. Store the gazpacho in an airtight container in the refrigerator for up to 3 days and stir it before serving, as it may separate. It does not need to be reheated. It can be frozen for up to 1 month, although the texture will be less emulsified; thaw it in the refrigerator and re-blend it before serving.

- 1.2 kgvery ripe plum tomatoes
- 120 gcucumber, peeled and deseeded
- 100 gItalian green pepper, stemmed and deseeded
- 50 gday-old white bread crumb
- 1 unidadsmall garlic clove, peeled and germ removed
- 80 mlextra virgin olive oil
- 25 mlSherry vinegar
- 8 gfine salt
- 100 mlvery cold water, more if needed
- 6 unidadesice cubes, for quick chilling
Instructions
- 1Wash the tomatoes, remove the stems, and quarter them. Reserve 40 g of tomato, 20 g of cucumber, and 20 g of pepper diced for garnish, if desired.
- 2Place the bread crumb in a bowl, pour the vinegar and 30 ml of cold water over it, and let it soften for 5 minutes.
- 3Place the tomatoes, cucumber, pepper, garlic, salt, and soaked bread with all its liquid in a blender. Blend on high speed for 2 minutes, until a uniform mixture is obtained.
- 4With the blender running on medium speed, gradually incorporate the olive oil for 1 minute to emulsify the gazpacho. Add the remaining 70 ml of water and blend for 30 more seconds.
- 5Pass the gazpacho through a fine sieve, pressing the solids with a ladle. Taste and adjust with an additional pinch of salt, vinegar, or cold water; it should be fluid but with body.
- 6Pour the gazpacho into a pitcher, add the ice cubes, and refrigerate for at least 2 hours. Remove any unmelted ice, stir well, and serve at about 8 °C, accompanied by the reserved diced vegetables.
