Easy Chicken Biryani Recipe
shared by Nibblore Kitchen
This one-pot biryani layers juicy spiced chicken with fragrant basmati rice, caramelized onion, mint, and warming whole spices. Partially cooking the rice before steaming it over the chicken keeps the grains separate while allowing them to absorb the savory juices. It is festive enough for guests but practical for a weekend dinner. • Use aged basmati rice if available; it produces longer, firmer grains that are less likely to clump. • Keep the heat very low during the covered steam. If your burner runs hot, place a cast-iron skillet beneath the pot as a heat diffuser. • Do not fully cook the rice before layering; its firm center absorbs steam and chicken juices without becoming mushy. • Replace chicken thighs with an equal weight of boneless chicken breast, cut into 4 cm pieces; begin checking for doneness after 18 minutes of covered cooking. • Use 1/4 teaspoon ground cardamom and 1/4 teaspoon ground cinnamon if whole spices are unavailable; add them with the other ground spices in the marinade. • Replace saffron milk with 3 tablespoons warm milk mixed with a small pinch of turmeric for color, although the aroma will differ. • Use a neutral cooking oil instead of ghee for a dairy-free version, and choose an unsweetened dairy-free yogurt that is suitable for cooking. Cool leftovers within 2 hours and refrigerate in an airtight container for up to 3 days, or freeze in portions for up to 2 months. Reheat once, covered, with 1 tablespoon water per serving in a 160°C oven until steaming hot throughout, or microwave until the center reaches 74°C.

- 1 tbspginger, finely grated
- 4 clovegarlic, finely grated
- 2 tbsplemon juice
- 2 tspgaram masala
- 1 tspground cumin
- 1 tspground coriander
- 1 tspKashmiri chili powder
- ½ tspground turmeric
- 2 ¼ tspfine salt, divided
- 3 tbspghee, divided
- 2yellow onions, thinly sliced
- 1cinnamon stick, about 7 cm long
- 5green cardamom pods, lightly crushed
- 5whole cloves
- 1bay leaf
- 1green chili, slit lengthwise
- 1ripe tomato, diced
- 750 mlwater
- 15 gcilantro leaves and tender stems, chopped
- 15 gmint leaves, chopped
- 3 tbspwhole milk, warmed
- 1 pinchsaffron threads, crumbled
Instructions
- 1Rinse the basmati rice in several changes of cool water until the water is nearly clear. Cover it with fresh cool water and soak for 20 minutes, then drain thoroughly in a fine-mesh sieve.
- 2Combine the chicken, yogurt, ginger, garlic, lemon juice, garam masala, cumin, coriander, chili powder, turmeric, and 1 teaspoon salt in a bowl. Mix until every piece is coated, then marinate at room temperature while the rice soaks, for no more than 30 minutes.
- 3Warm the milk, add the saffron, and set it aside to infuse. Heat 2 tablespoons ghee in a heavy 5- to 6-liter Dutch oven over medium heat. Add the onions and cook for 14 to 18 minutes, stirring frequently, until deeply golden but not burnt. Transfer half of the onions to a plate.
- 4Add the remaining 1 tablespoon ghee, cinnamon, cardamom, cloves, and bay leaf to the onions in the pot. Stir for 30 seconds until fragrant. Add the green chili and tomato; cook for 3 to 4 minutes, stirring, until the tomato begins to soften.
- 5Add the chicken with all its marinade. Cook uncovered over medium-high heat for 7 to 9 minutes, stirring occasionally, until the chicken loses its raw exterior and the sauce thickens slightly. Reduce the heat to low while you par-cook the rice.
- 6Meanwhile, bring 750 ml water and the remaining 1 1/4 teaspoons salt to a boil in a separate 3-liter saucepan. Add the drained rice, stir once, and return to a gentle boil. Cook uncovered for 5 to 6 minutes; a grain should be flexible at the edges but still firm and chalky at its center. Drain immediately.
- 7Spread the par-cooked rice evenly over the chicken without stirring the layers together. Scatter the reserved onions, cilantro, and mint over the rice, then drizzle with the saffron milk. Cover the pot tightly; if the lid is loose, place a sheet of foil beneath it.
- 8Cook over the lowest heat for 22 minutes. Turn off the heat and leave the pot covered for 10 minutes so the rice finishes steaming. Check that the rice is tender and the chicken has reached at least 74°C at its thickest point.
- 9Uncover and gently lift the chicken and sauce through the rice with a wide spatula, taking care not to crush the grains. Remove the bay leaf and cinnamon stick if visible, then serve hot.
