Creamy Red Lentil Soup with Cumin and Lemon
shared by مطبخ Nibblore
This warming red lentil soup is creamy without any dairy, with earthy cumin and fresh lemon balancing every spoonful. Sautéing the onion, carrot, and spices builds depth, while red lentils break down quickly for a naturally smooth texture. It makes a satisfying light lunch or comforting dinner. • Rinse the lentils until the water runs nearly clear to reduce foam and give the soup a cleaner flavour. • Add the lemon juice only after the lentils are tender, as adding it earlier can slow softening and dull its fresh flavour. • The soup thickens as it cools, so loosen it with a little hot water or stock before serving if needed. • Replace the vegetable stock with water, adding salt gradually and an extra 0.5 teaspoon of cumin. • Replace the carrot with 150 g peeled, finely diced potato for a fuller-bodied texture. • Use fresh coriander instead of parsley if you prefer its flavour. • For a subtle smoky note, replace 0.5 teaspoon of the cumin with 0.5 teaspoon of smoked paprika. Let the soup cool completely, then refrigerate it in an airtight container for up to 4 days or freeze in individual portions for up to 3 months. Thaw overnight in the fridge, then reheat over medium-low heat, stirring and adding a little water or stock as needed, until piping hot and restored to the desired consistency.

- 300 gred split lentils, rinsed and drained
- 2 tbspolive oil
- 1yellow onion, medium, chopped
- 1carrot, medium, peeled and finely diced
- 2 clovegarlic, finely minced
- 2 tspground cumin
- ½ tspground turmeric
- ¼ tspground black pepper
- 1 ¼ lgluten-free vegetable stock
- 1 tspfine salt, or to taste depending on the stock
- 3 tbsplemon juice, freshly squeezed
- 1 tbspfresh parsley, chopped, for serving
- 4lemon slices, for serving
Instructions
- 1Heat the olive oil in a heavy 3-litre saucepan over medium heat. Add the onion and carrot and cook for 7–8 minutes, stirring about once a minute, until the onion is soft and the edges of the carrot are lightly browned.
- 2Add the garlic, cumin, turmeric, and black pepper. Stir for just 45 seconds, until fragrant, taking care not to burn the garlic.
- 3Add the drained lentils, vegetable stock, and salt, then increase the heat and bring to a boil. Skim off any foam that rises to the surface, reduce the heat to low, and partially cover the saucepan.
- 4Simmer gently for 22–25 minutes, stirring two or three times, until the lentils have completely broken down and the carrot mashes easily under the back of a spoon.
- 5Remove the saucepan from the heat and let the soup cool for 2 minutes. Blend in the saucepan with an immersion blender for 1–2 minutes, until smooth and creamy. If using a countertop blender, work in small batches and leave the lid vent open so steam can escape.
- 6Return the saucepan to low heat for 2 minutes. Stir in the lemon juice, then taste and adjust the salt; add a little hot water if the soup is thicker than desired.
- 7Ladle the soup hot into four bowls, garnish with parsley, and serve each portion with a lemon slice for squeezing over to taste.
