Congee Recipe with Chicken and Ginger

shared by Nibblore Kitchen

This savory Chinese rice porridge is silky, warming, and fragrant with fresh ginger. Briefly marinating the chicken keeps it tender, while occasional whisking helps the rice release its starch for a creamy texture without dairy. Serve it for a comforting breakfast, lunch, or light dinner. • Congee thickens substantially as it stands, so finish it slightly looser than you want to serve it. • Use a heavy-bottomed pot and maintain a lazy simmer; vigorous boiling increases sticking and can make the porridge spit. • Slice the chicken uniformly and add it only near the end so it remains tender. • Replace jasmine rice with another long-grain white rice; avoid converted or parboiled rice because it releases less starch. • Use boneless skinless chicken breast instead of thighs, but begin checking for doneness after 6 minutes to prevent drying. • Replace cilantro with additional scallions if you dislike its flavor. • Use water in place of chicken stock and season the finished congee with additional salt to taste. Cool leftovers promptly and refrigerate in an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave until steaming hot throughout, stirring in water or gluten-free chicken stock to restore the loose consistency. Freeze cooled portions for up to 1 month; thaw overnight in the refrigerator before reheating.

Ingredients

  • 200 gjasmine rice, rinsed until the water is mostly clear and drained
  • 2 lchicken stock, unsalted and certified gluten-free
  • 30 gfresh ginger, peeled and cut into thin matchsticks
  • 450 gboneless skinless chicken thighs, sliced across the grain into 5 mm strips
  • 1 tbsptamari, certified gluten-free
  • 2 tspcornstarch
  • 1 tspneutral cooking oil
  • ½ tspfine salt, plus more to taste
  • ¼ tspground white pepper
  • 3scallions, thinly sliced
  • 15 gfresh cilantro leaves and tender stems, roughly chopped

Instructions

  1. 1Combine the drained rice, chicken stock, and two-thirds of the ginger in a 5- to 6-quart heavy-bottomed pot. Bring to a boil over medium-high heat, stirring along the bottom to prevent the rice from sticking.
  2. 2Reduce the heat to low and partially cover the pot, leaving a 2 cm gap for steam to escape. Simmer gently for 45 minutes, stirring every 10 minutes and more frequently near the end, until the grains have broken down and the porridge is creamy. If it begins sticking, reduce the heat and stir in 60 ml water.
  3. 3While the rice cooks, combine the chicken, tamari, cornstarch, neutral oil, salt, and white pepper in a bowl. Mix until no dry cornstarch remains, then refrigerate for at least 15 minutes and up to 45 minutes.
  4. 4After the congee has cooked for 45 minutes, whisk it firmly for 30 seconds to break up more of the rice. Stir in the marinated chicken and remaining ginger, separating any clumps with a spoon.
  5. 5Return the congee to a gentle simmer over medium-low heat. Cook uncovered for 8 to 10 minutes, stirring frequently, until the chicken is opaque throughout and its thickest pieces reach 74°C. Add 60 to 180 ml hot water if needed to reach a loose, spoonable consistency.
  6. 6Taste and add more salt if needed. Ladle the hot congee into four bowls, then top evenly with the scallions and cilantro. Serve immediately.
