- 680 gground beef with approximately 20% fat
- 1 tspsalt
- ½ tspfreshly ground black pepper
- ½ tspgarlic powder
- 1 tbspneutral cooking oil
- 4dairy-free, sesame-free burger buns
- 4lettuce leaves
- 1large tomato, sliced
- 4–8pickle slices
- 2large onions, thinly sliced
- 1 tbspolive oil
- Pinchsalt
- 2 tbspwater, as needed
- 4 tbspmayonnaise
- 2 tbspketchup
- 1 tbspfinely chopped pickles
- 1 tspmustard
- ½ tspsmoked paprika
- ¼ tspgarlic powder
Instructions
- 1Combine all the sauce ingredients and refrigerate until needed.
- 2Heat the olive oil in a pan over medium-low heat. Add the onions and salt.
- 3Cook the onions for 15–20 minutes, stirring occasionally. Add a splash of water if they begin sticking.
- 4Divide the beef into four equal portions. Shape each portion gently into a patty slightly wider than the bun.
- 5Press a shallow indentation into the centre of each patty to help it remain flat.
- 6Season both sides with salt, pepper and garlic powder immediately before cooking.
- 7Heat a heavy skillet until very hot, then add the neutral oil.
- 8Cook the patties without pressing them for approximately 3–4 minutes per side. Ground beef should reach 71°C internally.
- 9Toast the cut sides of the buns in the same pan for about one minute.
- 10Spread sauce over both bun halves. Add lettuce, the beef patty, caramelized onions, tomato and pickles.
