Ingredients

  • 680 gground beef with approximately 20% fat
  • 1 tspsalt
  • ½ tspfreshly ground black pepper
  • ½ tspgarlic powder
  • 1 tbspneutral cooking oil
  • 4dairy-free, sesame-free burger buns
  • 4lettuce leaves
  • 1large tomato, sliced
  • 4–8pickle slices
  • 2large onions, thinly sliced
  • 1 tbspolive oil
  • Pinchsalt
  • 2 tbspwater, as needed
  • 4 tbspmayonnaise
  • 2 tbspketchup
  • 1 tbspfinely chopped pickles
  • 1 tspmustard
  • ½ tspsmoked paprika
  • ¼ tspgarlic powder

Instructions

  1. 1Combine all the sauce ingredients and refrigerate until needed.
  2. 2Heat the olive oil in a pan over medium-low heat. Add the onions and salt.
  3. 3Cook the onions for 15–20 minutes, stirring occasionally. Add a splash of water if they begin sticking.
  4. 4Divide the beef into four equal portions. Shape each portion gently into a patty slightly wider than the bun.
  5. 5Press a shallow indentation into the centre of each patty to help it remain flat.
  6. 6Season both sides with salt, pepper and garlic powder immediately before cooking.
  7. 7Heat a heavy skillet until very hot, then add the neutral oil.
  8. 8Cook the patties without pressing them for approximately 3–4 minutes per side. Ground beef should reach 71°C internally.
  9. 9Toast the cut sides of the buns in the same pan for about one minute.
  10. 10Spread sauce over both bun halves. Add lettuce, the beef patty, caramelized onions, tomato and pickles.
