Ingredients

  • 1.2 kgpieces of chicken
  • 750 mlred wine
  • 150 gbacon bits
  • 250 gbutton mushrooms
  • 2carrots
  • 1large onion
  • 2cloves garlic
  • 2 tbspflour
  • 2 tbspoil
  • 30 gbutter
  • 1bouquet garni
  • 250 mlchicken broth
  • Salt and pepper
  • Fresh parsley

Instructions

  1. 1Peel the carrots and onion. Slice the carrots into rounds and thinly slice the onion.
  2. 2Heat the oil in a Dutch oven. Brown the chicken pieces on all sides, then remove them.
  3. 3Add the bacon bits, onion, and carrots. Sauté for five minutes.
  4. 4Add the minced garlic and flour. Mix for one minute.
  5. 5Return the chicken to the Dutch oven. Pour in the red wine and broth.
  6. 6Add the bouquet garni, lightly salt and pepper.
  7. 7Cover and simmer over low heat for about 1 hour.
  8. 8Clean and cut the mushrooms. Sauté them in the butter for five to seven minutes.
  9. 9Add the mushrooms to the Dutch oven and continue cooking for 15 minutes without the lid, so that the sauce thickens slightly.
  10. 10Remove the bouquet garni and sprinkle with fresh parsley.
