  • 1 cupneutral oil, such as grapeseed, sunflower, or canola oil

Instructions

  1. 1Pour the soy milk, rice vinegar, lemon juice, nutritional yeast, salt, sugar, and garlic powder into a narrow, straight-sided container just wide enough to accommodate the head of an immersion blender. Blend for 10 seconds to dissolve the seasonings.
  2. 2Add all the neutral oil and let the mixture stand undisturbed for 1 minute so the oil forms a distinct upper layer.
  3. 3Place the immersion blender flat against the bottom of the container. Blend without moving it for 15 to 20 seconds, until a thick, pale emulsion forms around the blade.
  4. 4Keeping the blender running, tilt it slightly and raise it very slowly through the remaining oil over 20 to 30 seconds. Move it up and down twice to incorporate any oil at the surface; the mayonnaise should be glossy and thick enough to hold soft peaks.
  5. 5Taste and adjust with an additional pinch of salt or up to 1 teaspoon rice vinegar if desired. Transfer to a clean jar, cover, and refrigerate for at least 30 minutes before serving so the mayonnaise thickens and the flavors meld.
