Green Goddess Crunch Tacos
shared by Nibblore Kitchen
Smoky, caramelized cauliflower fills warm corn tortillas with plenty of crisp-edged texture. A cool avocado-herb crema balances the spice, while toasted pepitas add a savory crunch. These colorful tacos are easy enough for a weeknight but striking enough to share with friends. • Cut the cauliflower into florets no larger than 1 1/2 inches so the centers become tender before the spices scorch. • Preheating the sheet pan gives the cauliflower immediate contact heat, creating better browning without a long roasting time. • Keep the cabbage dry and add it only when assembling so it retains its crisp texture. • Replace the Greek yogurt with plain unsweetened dairy-free yogurt for a dairy-free version. • Use parsley in place of half the cilantro if you prefer a milder herbal flavor. • Substitute toasted sunflower seeds for the pepitas if needed. • Use broccoli florets instead of cauliflower, checking them after 18 minutes because they may cook faster. Refrigerate the cauliflower, crema, cabbage, and tortillas separately in airtight containers for up to 3 days. Press a piece of reusable food wrap directly against the crema to limit browning. Reheat the cauliflower on a sheet pan at 400°F (200°C) for 6 to 8 minutes and warm the tortillas in a dry skillet; freezing is not recommended.

- 1cauliflower, cut into small florets
- 2 tbspolive oil
- 1 ½ tspsmoked paprika
- 1 tspground cumin
- ¾ tspfine salt, divided
- 1avocado, ripe
- ½ cupplain Greek yogurt
- 1lime, zested and juiced
- 1 cupcilantro leaves and tender stems, loosely packed
- 2scallions, roughly chopped
- 2 tbspwater, plus more as needed
- 8corn tortillas
- ⅓ cuppepitas, roasted and salted
- 1 cupred cabbage, finely shredded
Instructions
- 1Position a rack in the upper third of the oven and heat the oven to 450°F (230°C). Place a large rimmed sheet pan in the oven while it heats.
- 2In a large bowl, toss the cauliflower with the olive oil, smoked paprika, cumin, and 1/2 teaspoon of the salt until evenly coated. Carefully spread it in a single layer on the hot sheet pan. Roast for 15 minutes, turn the florets, then roast for 7 to 10 minutes more, until deeply browned at the edges and tender through the stems.
- 3While the cauliflower roasts, make the crema. Blend the avocado, yogurt, lime zest, 2 tablespoons lime juice, cilantro, scallions, water, and remaining 1/4 teaspoon salt until smooth. Add another tablespoon of water if needed to make a thick but spoonable sauce. Taste and add a little more lime juice if desired.
- 4Warm the tortillas in a dry skillet over medium-high heat for 20 to 30 seconds per side, until pliable and lightly toasted. Stack them under a clean kitchen towel to keep warm.
- 5Spread about 1 tablespoon of avocado crema over each warm tortilla. Divide the roasted cauliflower and shredded cabbage among the tortillas, then scatter with the pepitas. Spoon the remaining crema over the top and serve immediately.
