Chili Crisp Wonton Nachos
shared by Nibblore Kitchen
Shatteringly crisp wonton chips are layered with sticky soy-glazed pork, bubbling cheese, and a fiery chili-crisp drizzle. Baking the wrappers first keeps them sturdy under the toppings, while a quick broil delivers irresistible browned edges. Serve immediately as a shareable party appetizer or game-night snack. • Keep the wonton triangles in a single layer during their first bake; crowded or overlapping wrappers steam instead of crisping. • Drain off excess rendered pork fat before adding the glaze if more than 1 tablespoon collects in the skillet. • Assemble the nachos just before the final bake so the chips stay crisp beneath the pork and cheese. • Chili crisp varies widely in heat and saltiness; taste yours and reduce the final drizzle if needed. • Use ground chicken or turkey in place of the ground pork, adding an extra teaspoon of oil if the meat is very lean. • Replace mozzarella with Monterey Jack for a richer melt or mild cheddar for a sharper flavor. • Use maple syrup or packed brown sugar in place of the honey. • Replace cilantro with additional sliced scallions if preferred. These nachos are best eaten immediately. Refrigerate leftover assembled nachos in an airtight container for up to 2 days, then reheat on a baking sheet at 190°C for 6 to 8 minutes; they will be less crisp. The pork topping can be refrigerated separately for up to 3 days or frozen for up to 2 months, while baked un-topped wonton chips keep airtight at room temperature for 2 days.

- 24wonton wrappers, cut diagonally into triangles
- 2 tbspneutral oil, divided
- 340 gground pork
- 2 clovegarlic, finely grated
- 2 tspfresh ginger, finely grated
- 2 tbspsoy sauce
- 1 tbsphoney
- 2 tsprice vinegar
- 170 glow-moisture mozzarella cheese, coarsely grated
- 3 tbspchili crisp, well stirred and divided
- 2scallions, thinly sliced
- 2 tbspfresh cilantro leaves
- 1 tsptoasted sesame seeds
- 1lime, cut into wedges
Instructions
- 1Heat the oven to 200°C. Line two large rimmed baking sheets with parchment paper. Arrange the wonton triangles in single layers, brush both sides with 1 tablespoon of the oil, and bake for 7 to 9 minutes, rotating the pans halfway through, until evenly golden and crisp. Watch closely during the final 2 minutes. Leave the oven on.
- 2While the chips bake, heat the remaining 1 tablespoon oil in a 25 cm skillet over medium-high heat. Add the pork and cook for 5 to 6 minutes, breaking it into small crumbles, until browned and no pink remains.
- 3Add the garlic and ginger to the pork and cook for 30 seconds, stirring constantly. Stir in the soy sauce, honey, and rice vinegar. Cook for 1 to 2 minutes, until the liquid reduces to a glossy glaze that clings to the meat, then remove the skillet from the heat.
- 4Consolidate the wonton chips on one lined baking sheet, overlapping them slightly but avoiding a deep pile. Scatter the glazed pork evenly over the chips, followed by the mozzarella and 1 tablespoon of the chili crisp.
- 5Bake at 200°C for 4 to 5 minutes, until the cheese melts. Switch the oven to broil and broil for 30 to 90 seconds, watching continuously, until the cheese bubbles and develops a few browned spots.
- 6Drizzle the nachos with the remaining 2 tablespoons chili crisp. Scatter with the scallions, cilantro, and sesame seeds, then serve immediately with lime wedges for squeezing.
