Chocolate Tahini Date Bark

shared by Nibblore Kitchen

Snappy dark chocolate surrounds a chewy layer of dates and nutty tahini, while flaky sea salt sharpens every bite. Pressing the dates into a thin sheet keeps the bark easy to break and prevents it from becoming overly sticky. This no-bake dessert is ideal for making ahead and serving straight from the refrigerator. • Use soft, plump dates; if they feel dry, cover them with hot water for 5 minutes, then drain and dry them thoroughly before pressing. • Stir the tahini well from the bottom of the jar so its texture is creamy rather than oily or stiff. • Keep all bowls and utensils completely dry while melting the chocolate, since even a small amount of water can make it seize. • Replace Medjool dates with another soft date variety, using enough to create an equally dense pressed layer. • Replace the coconut oil with 1 teaspoon of refined cocoa butter, or omit it for a slightly firmer chocolate shell. • Replace the cardamom with 1/2 teaspoon ground cinnamon or 1 teaspoon finely grated orange zest. • Use dairy-free chocolate with clearly verified allergen labeling when those dietary claims are required. Store the bark in an airtight container, with parchment between layers, in the refrigerator for up to 10 days. Freeze for up to 2 months and let the pieces stand at room temperature for 5 minutes before eating; reheating is not recommended.

Ingredients

  • 280 gMedjool dates, pitted
  • 240 gdark chocolate, finely chopped
  • 1 tspcoconut oil
  • 60 gtahini, well stirred
  • ½ tspground cardamom
  • ½ tspflaky sea salt

Instructions

  1. 1Line a 23 x 33 cm rimmed baking sheet or flat tray with parchment paper. Split the dates lengthwise and arrange them cut-side up in a tight rectangle about 18 x 24 cm, overlapping the edges so no large gaps remain.
  2. 2Cover the dates with a second sheet of parchment. Use the base of a measuring cup to press firmly until the dates form an even sheet about 6 mm thick. Remove the top parchment and pinch together any visible gaps.
  3. 3Combine the dark chocolate and coconut oil in a dry, microwave-safe bowl. Microwave in 20-second intervals, stirring thoroughly after each interval, until the chocolate is smooth; this should take 1 1/2 to 2 minutes total. Alternatively, stir them in a heatproof bowl over barely simmering water for 3 to 4 minutes, keeping the bowl above the water.
  4. 4Spread half of the melted chocolate over the dates in a thin, even layer. Refrigerate the tray for 8 minutes, until the surface is set but not rock hard.
  5. 5Stir the tahini with the cardamom, then spoon it over the chilled chocolate. Spread it gently, leaving a 1 cm border so it does not run from the edges.
  6. 6Pour the remaining chocolate over the tahini and spread it to cover completely. Drag the tip of a knife through the top to create subtle ripples, then immediately sprinkle with flaky sea salt.
  7. 7Refrigerate for 35 to 45 minutes, until the chocolate is fully firm. Cut with a warm, dry knife for neat pieces or break into 12 irregular shards. Serve chilled so the bark remains crisp.
