Argentine Beef Empanadas

Tip: prepare the filling a few hours in advance. When it's cold, the empanadas are easier to close and turn out juicier.

Ingredients

  • 500 gground beef
  • 1large chopped onion
  • ½chopped red pepper
  • 2chopped hard-boiled eggs
  • 50 gchopped green olives
  • 1 teaspoonsweet paprika
  • ½ teaspooncumin
  • ½ teaspoonoregano
  • Salt and pepper
  • 2 tablespoonsoil
  • 12empanada dough discs
  • 1beaten egg for brushing

Instructions

  1. 1Heat the oil in a pan and sauté the onion and pepper for 5–7 minutes.
  2. 2Add the ground beef and cook until it changes color, breaking it up with a spoon.
  3. 3Add the paprika, cumin, oregano, salt, and pepper. Cook for a few more minutes.
  4. 4Remove the filling from the heat and let it cool completely.
  5. 5Add the hard-boiled eggs and olives. Mix well.
  6. 6Place a generous spoonful of filling in the center of each dough disc.
  7. 7Lightly moisten the edges with water, fold the dough in half, and press to seal. Seal the edges with a fork or make the traditional repulgue.
  8. 8Place the empanadas on a baking sheet with parchment paper and brush them with beaten egg.
  9. 9Bake at 200 °C for 18–22 minutes, until golden brown.
