Argentine Beef Empanadas

Tip: prepare the filling a few hours in advance. When it's cold, the empanadas are easier to close and turn out juicier.

- 500 gground beef
- 1large chopped onion
- ½chopped red pepper
- 2chopped hard-boiled eggs
- 50 gchopped green olives
- 1 tspsweet paprika
- ½ tspcumin
- ½ tsporegano
- Salt and pepper
- 2 tbspoil
- 12empanada dough discs
- 1beaten egg for brushing
Instructions
- 1Heat the oil in a pan and sauté the onion and pepper for 5–7 minutes.
- 2Add the ground beef and cook until it changes color, breaking it up with a spoon.
- 3Add the paprika, cumin, oregano, salt, and pepper. Cook for a few more minutes.
- 4Remove the filling from the heat and let it cool completely.
- 5Add the hard-boiled eggs and olives. Mix well.
- 6Place a generous spoonful of filling in the center of each dough disc.
- 7Lightly moisten the edges with water, fold the dough in half, and press to seal. Seal the edges with a fork or make the traditional repulgue.
- 8Place the empanadas on a baking sheet with parchment paper and brush them with beaten egg.
- 9Bake at 200 °C for 18–22 minutes, until golden brown.
