Spicy Sichuan Noodles

Tip: For a milder version, use less chili oil and Sichuan pepper. For more spiciness, add extra chili flakes.

Ingredients

  • 250 gChinese wheat noodles or ramen noodles
  • 2Spring onions
  • 2cloves garlic
  • 2 ELChili oil
  • 1 ELlight soy sauce
  • 1 ELChinese black rice vinegar
  • 1 ELsesame paste or unsweetened peanut butter
  • 1 TLSesame oil
  • ½ TLSugar
  • ½ TLground Sichuan pepper
  • 2–4 ELhot noodle water
  • 1 TLtoasted sesame seeds
  • A small handfulchopped peanuts
  • Optional: cucumber strips, pak choi or coriander

Instructions

  1. 1Finely chop the spring onions and mince the garlic.
  2. 2In a large bowl, whisk together the chili oil, soy sauce, black rice vinegar, sesame paste, sesame oil, sugar, garlic, and Sichuan pepper.
  3. 3Cook the noodles according to package instructions. Before draining, reserve some of the noodle water.
  4. 4Add two tablespoons of hot noodle water to the sauce and whisk until smooth and creamy. Add more water if needed.
  5. 5Add the hot noodles directly to the bowl and mix thoroughly with the sauce.
  6. 6Garnish with spring onions, sesame seeds, and chopped peanuts.
  7. 7Serve with cucumber strips, pak choi, or fresh cilantro as desired.
