Easy, Airy Chocolate Mousse
shared by Nibblore Cuisine
This classic French chocolate mousse is light and bubbly, with a rich cocoa flavor that is not overly sweet. A little whipped cream adds silkiness, while softly beaten egg whites keep the texture airy. Make it at least 3 hours before serving so it has time to set properly. • Use very fresh eggs and keep the mousse refrigerated, as the eggs are not fully cooked. • The chocolate should be warm rather than hot when you add the yolks, or they may curdle. • To preserve the air bubbles, fold in the egg whites with a spatula rather than a whisk, and stop mixing as soon as the mousse is evenly combined. • Take the glasses out of the refrigerator 5 minutes before serving to bring out the chocolate flavor. • Replace the 64% chocolate with any dark chocolate containing 60% to 70% cocoa, without changing the other quantities. • Replace the vanilla extract with 1 teaspoon cooled espresso to intensify the cocoa notes. • For a milder flavor, use 120 g dark chocolate and 60 g milk chocolate, then reduce the sugar to 15 g. Keep the mousses covered in the refrigerator and consume within 24 hours. Freezing is not recommended because it compromises their airy texture. Do not leave them at room temperature for more than 30 minutes, and do not reheat.

- 180 gdark chocolate, 64% cocoa, finely chopped
- 80 mlheavy cream, well chilled
- 4eggs, yolks and whites separated
- 25 ggranulated sugar
- 1 pinchfine salt
- 1 tspvanilla extract
Instructions
- 1Place the chopped chocolate in a heatproof bowl. Bring 3 cm of water to a gentle simmer in a saucepan, then set the bowl over it without letting the base touch the water. Melt the chocolate for 3 to 5 minutes, stirring regularly, until completely smooth. Remove from the heat and let cool for 5 minutes.
- 2Whisk the egg yolks into the warm chocolate one at a time, whisking vigorously after each addition. Add the vanilla extract. The mixture should be smooth, glossy and still fluid.
- 3Pour the well-chilled cream into a cold bowl. Whip for 2 to 3 minutes, until soft peaks form and droop slightly. Stir one-third of the whipped cream into the chocolate mixture to loosen it, then gently fold in the remainder with a spatula.
- 4In a clean, completely dry bowl, beat the egg whites with the salt on medium speed until foamy, about 1 minute. Gradually add the sugar, then continue beating for 2 to 3 minutes, until the whites form soft, glossy peaks. Do not beat them until stiff, or they will be difficult to fold in.
- 5Stir one-third of the beaten egg whites gently into the chocolate mixture to lighten it. Fold in the remainder in two additions with a spatula, scooping from the bottom up while rotating the bowl. Stop as soon as no white streaks remain.
- 6Immediately divide the mousse among 6 small dessert glasses with a capacity of 150 to 180 ml each. Cover without touching the surface and refrigerate for at least 3 hours, ideally 4 hours, before serving well chilled.
